(Yields 4 servings)
1 lb pasture-raised, grass fed lean ground beef
1 Tbsp olive oil
2-3 cloves garlic, minced
1 onion, chopped
1 Tbsp curry powder
1 tsp cumin
2 Tbsp Tamari sauce (or soy sauce)
3/4 cup beef broth
2-3 medium white potatoes
3/4 cup green peas (fresh or frozen)
1 Tbsp arrowroot flour (or corn starch)
Peel potatoes and chop into bite sized cubes. Boil in water until soft but not falling apart. Set aside.
In large skillet heat oil. Add onion, garlic and spices. Cook until onions are translucent, and spices are fragrant. Add ground beef and cook thoroughly. Add peas, broth and tamari. Cook until peas are soft.
If you desire a thicker sauce you can add arrowroot flour and stir on high heat until juices thicken.
Add potatoes and stir until all ingredients are thoroughly mixed together and sauce is evenly distributed.
Serve and enjoy!
