Simplest Ever Chocolate Chip Cookies


1/3 cup almond butter

2 Tbsp. olive oil

1 tsp. vanilla extract

1 cup cane sugar

1/3 cup water

1 cup rolled oats

1 cup oat flour (or Bobs Red Mill 1

1/2 cup diary free chocolate chips (chocolate chunks are even better)


Mix first 5 ingredients in a large mixing bowl.  Add remaining 3 ingredients and stir together. Drop spoonfulls on greased cookie sheet.  Bake at 375 degrees for 10-12 minutes.  Remove from oven and let cool for at least 10 minutes.  Makes about 12-14 cookies.
